-2 soft-boiled eggs

-4 tablespoons (60 ml) toasted almonds

-1 cup (250 ml) cooked couscous

-10 cherry tomatoes, quartered

-4 tablespoons (60 ml) hummus

-20 fresh mint leaves, halved

-2 jarred roasted red peppers, cut into strips

Oregano and honey vinaigrette

2 teaspoons (10 ml) honey

1 tablespoon (15 ml) balsamic vinegar

¼ cup (60 ml) olive oil

1 teaspoon (5 ml) Dijon mustard

¼ teaspoon (1.25 ml) pepper

¼ teaspoon (1.25 ml) salt

2 tablespoons (30 ml) chopped fresh oregano

Mediterranean Bowl Recipe : Preparation

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a bowl, combine the broccoli, lemon juice, and olive oil. Season with salt and pepper. Spread the broccoli on a baking sheet lined with parchment paper and roast in the oven for 15 minutes. Remove from the oven and let cool.

Step 3

Place all the ingredients for the oregano and honey vinaigrette in a Mason jar or plastic container, shake vigorously, and set aside.
