Baked Salmon Bites With Lemon Yogurt Sauce

A full salmon fillet can look like a lot. Small bites are easier. You can eat a few, stop, and come back later. These baked salmon bites are soft and mild. The cool lemon yogurt sauce goes on the side. One serving gives you 28 g of protein for about 200 calories.

Serving size: 6 bites (about 3 oz / 85 g cooked salmon) with 3 tbsp sauce (about 50 g). Makes: 4 servings, 24 bites in total.

Why This Works on GLP-1

  • Protein in small pieces. Each 1-inch bite is one or two small mouthfuls. You decide how many to eat.
  • Soft texture. Baked salmon flakes easily. It is gentle to chew and swallow.
  • Mild flavors. Lemon, garlic powder, and dill. No hot spices, no heavy breading.
  • A light sauce. The sauce is nonfat Greek yogurt with cucumber. It adds 3 g of protein per serving.

Ingredients

For the salmon bites (4 servings):

  • 1 lb skinless wild coho salmon fillet (454 g), fresh or thawed frozen
  • 1 tsp olive oil (5 g)
  • 1/2 tsp garlic powder (2 g)
  • Zest of 1/2 lemon
  • 1/4 tsp salt
  • A pinch of black pepper

For the lemon yogurt sauce:

  • 1/2 cup plain nonfat Greek yogurt (120 g)
  • 1 tbsp lemon juice (15 ml)
  • 1/3 cup grated cucumber, squeezed dry (60 g)
  • 1/2 tsp dried dill (1 g), or 1 tbsp fresh dill
  • A pinch of salt

Instructions

  1. Heat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the salmon dry with paper towels. Remove any small bones.
  3. Cut the salmon into 1-inch (2.5 cm) cubes. You should get about 24 bites of about 19 g each.
  4. Put the cubes in a bowl. Add the olive oil, garlic powder, lemon zest, salt, and pepper. Toss gently.
  5. Spread the bites on the sheet with a little space between them.
  6. Bake for 8 to 10 minutes, until the salmon flakes easily and reaches 145°F (63°C) inside.
  7. While the salmon bakes, stir the yogurt, lemon juice, cucumber, dill, and salt in a small bowl.
  8. Serve 6 bites with 3 tbsp of sauce. Let the rest cool before storing.

Small cubes cook fast. Check at 8 minutes so they stay moist.

Why Salmon?

Based on USDA data, raw wild coho salmon has about 22 g of protein per 100 g. Coho is often sold frozen. It cooks quickly and stays tender. Its fat is mostly unsaturated. If fatty food bothers your stomach, eat fewer bites and add more sauce.
